How to make a heavenly bellini to complete that Sunday brunch. A simple bubbly cocktail that won't fail to lift your spirits. Enjoy this drink recipe especially in the summer months when white peaches are ripe, sweet, and in full season.
Ingredients
2 TBSP fresh white peach puree
Prosecco or sparkling white wine to fill up
Directions
  1. A quick way to puree a small amount of fresh white peach is by cutting the peach into wedges, peeling the skin off, and grating the wedges on a microplane. You must use this puree immediately or it will oxidize and turn an unsightly brown.

    (Other Options: You really must use fresh, ripe white peach because it just tastes more divine. But if it's not in season, you may consider using frozen white peach puree if you can find it, or peach nectar, like Kern's. Do not solely use peach schnapps, please.)
  2. Spoon 2 TBSP of the fresh white peach nectar into the bottom a champagne flute. Fill up the remainder of the flute with Prosecco or your choice of sparkling white wine. Watch out for overflow.
  3. Serve and enjoy!
